DIRECTIONS:
1. Wash chicken breasts; pat dry.
2. Flatten chicken slightly to an even thickness. HINT: Use a piece of plastic wrap over the chicken to avoid damaging the surface.
3. Combine flour, Cajun seasoning, salt and pepper
4. Cover chicken in flour mixture
5. Heat the olive oil in a large skillet over medium-high heat
6. Cook chicken in olive oil for about 5 minutes on each side until browned
7. Remove chicken to plate
8. Saute zucchini in the skillet for about 2 minutes
9. Add the lemon juice, chicken broth and cooked chicken
10. Cover and simmer over medium-low heat for about 15-20 minutes
11. Add tomato wedges, roasted red pepper and Alfredo sauce
12. Continue cooking until bubbly
13. Adjust season to taste
