2 lb salmon fillets skinned non stick cooking spray or olive oil 2 cups fresh basil leaves ½ cup grated parmesan & Romano cheese 5 cloves garlic peeled and crushed 2 tablespoons toasted pine nuts or walnuts ½ teaspoon salt ½ teaspoon pepper 1 tablespoon fresh lemon juice |
DIRECTIONS
1. Pre-heat oven to 450 degrees 2. Combine pesto ingredients by pulsing about 5 to 10 secondsin a food processor or blender until the texture of fine pebbles. Coat all sides of salmon fillets with pesto 3. Place salmon on a baking sheet prepared with non stick spray or oil so fillets are not touching. Bake in the top one third of the oven for 10-15 minutes depending onthickness. Allow 10 minutes per one inch of salmon thickness. 4. Top with fresh lemon juice and serve
